Gud/ Honey balancing Tridosha
Decrease of Phosphorous & Arsenic(in small quantity) is reason for Kaph. Gud(jaggery) contains
Phosphorus in great amounts and Arsenicin small quantity. Hence Kaph can
be balanced by consuming gud/ Honey. Sugarcane also has phosphorus but in
lower quantities than gud. Also gud can be consumed by a kid of 1 day. Also raab or
kakvi (intermediate form of gud) is better than gud.
Follow this rule while selecting the right gud – “In nature the things that are darker
are much higher in nutrient content than lighter shades.” Avoid white gud as white
gud is made by use of detergent/ Washing Powder. Gud is better if it is chocolate/
copper colored.
Gud can be mixed with ghee, curd, fruits, amla, triphala. Gud can be eaten separately
before/ after milk not be mixed with milk. Gud/ Honey can be mixed with powdered
cinnamon to treat for cough. Even diabetic patients can also consume good.
Difference between Sugar & Gud:
Even though sugar and gud are made from sugarcane they both are very different.
Sugar has no phosphorous while gud has immense amount of phosphorus.
Sugar finally gets digested into acid which causes hyper acidity, acidity in blood,
high blood pressure and other vata diseases. To digest sugar the body exerts the
same pressure needed to digest cold water. On the other hand, gud finally digested
is turned alkaline (base). And gud helps to digest other foods too.
There are 3 types of sugar = Glucose, Suruclose, Fructose. Fructose in fruits is
good and does not cause diabetes.
Foods made with Gud:
Gazak made from til (black is more preferred than white) and mungfali. Both these
are popular winter foods as Pitt is low and Kaph is high during winter. Also body
weight can be lowered by using gud & til.
Overall gud reduces acidity in blood and organs, treats excess uric acid & ganth
(nerve knots) on the body.
Honey can be used to get similar results as gud – honey from smaller bees is preferred.
